Swim Lessons

All smiles every day for 2 weeks when she woke up from her nap because she knew it meant SWIMMING TIME!!
We had a blast despite my apprehension to ever do a Mommy & Me class! I hope you know how much I love you Eliza!!
Being silly for the camera--he had so much personality during all the lessons--it was so fun to peek over from where Eliza and I were!
He's swimming to me!! His teacher let him swim to me at the end most days--it was so exciting!

Being the good Mom that I am--I enrolled my kids in swim lessons. Actually, I just wanted Xander to have some but knowing my daughter, I knew that there was no way I was going to be able to take Xander and have Eliza sit at a pool and WATCH! So I enrolled her and I in a Mommy & Me class during Xander's class. We were a little bummed at first because we got our class re-schedule to an afternoon time but it worked out SO well because Xander only had one other kid in his class--making for a semi-private lesson for the price of a group lesson--SCORE! The kids loved their lessons--Xander passed his class and can now swim at least 6 feet with his arms and legs going. I was very proud of him. Eliza could not have had more fun. The last day (of course) was play day and the kids got to go down this HUGE indoor slide--even Eliza got to go down on my lap!! Xander went all by himself and Eliza got off screaming for MORE! Her teacher said she had never seen someone her age SO excited. I think we went down 10 times. WHoo-HoO! The only bummer now is how the rec center has their lessons set-up. Xander graduated to Level 3 of 4 'Preschool' Levels and you cannot start the next set (where they learn to really swim & breathe) until you are 6...which he won't be until Nov 2011. So I'm not sure what to do about that. Any one available to teach some swim lessons????

Record Breaking Weather



I don't know what it is about Ben & I but it seems that wherever we move we bring 'record breaking weather'! When we moved to Arizona we had the longest stretch of 110 deg+ weather (something like 30 days) and then the coldest January temperatures. Now we move to Oregon and we top out at 106 degrees! Well, anyways, we much prefer Oregon's 106 to Phoenix 106--because it cools down at night a lot more here than there. It has been pretty fun to make fun of our friends though as they tell us it is too hot to even walk to the car! (Don't worry they make fun of us too as we show up in pants & sweaters when it's 68 degrees!!) The other night though, 102 degrees and all, I decided I wanted a Blizzard (no, I'm not pregnant, but I had a coupon that was going to expire). And since DQ is in walking distance of our abode--I refused to allow us to use a car. (ie one mile or less). I think people thought we were abusing our children--but our kids loved it! We had a blast and it was nice to get out--there was also a gentle breeze that kept us pretty cool. SO Much FUN!

18 Months!



Eliza Joy! You are 18 months old! What a crazy 18 months it has been--you are such a different child than your brother as your lives have been so different! You've been such a trooper through it all. You hate your carseat but you put up with all the driving and trips and moves. As long as you have your beloved blanket and fire, you'll sleep anywhere. You made it to 18 months with only 4 teeth! (However, within the last 2 weeks, 5 more are making their way in). But you enjoy eating everything! Your favorites are definitely fruit, cheese, and chicken nuggets--and lets not forget smoothies!! Your vocabulary never ceases to amaze us! You communicate so well. Right now, my favorite is when you go and sit down and say, "nime out, six, two, eight, four, ten!" and then you are all done and continue to do whatever you were doing. You love bubbles and swimming and swinging, going down slides and singing. You love to sing "la, La, LA!" and "lightening" or the "Pizza" song. You love your family dearly and hate to part--especially from Mommy. But you are starting to be a little bit more independent--'self' you say. Part of this new independent streak has included two successful trips to the potty--like I've already said--you never cease to amaze us!

There is so much we love about you--you are so beautiful and we are so grateful that you are part of our family! We love you so much and are so excited to continue to help you grow and learn as you teach and bring Joy to our lives in return!

Ft. Lewis, Washington




The kids and I drove up to visit my big brother, Conor, and his family, Amanda and Ashley last week. They now only live about 3 hours from our doorstep. The drive went pretty smoothly--Oregon and Washington have seriously amazed me! They are so beautiful! We had a great time visiting and Xander was in Heaven getting to see all the Army stuff. He was especially excited when Conor gave him an Army backpack. We sure love you guys and wish you all the best Conor! And we are so glad that we got to come and see you before you flew out to Afghanistan. God Bless America & God Bless our Soliders!!

She Knows What She Wants

When I finally got around to getting the camera--it appears a little coerced but in all reality it wasn't. Eliza (and Xander's) favorite past time is a trip to good ol' Costco where, if they have behaved, they get to enjoy a smoothie!! Enjoy!

Carrot Cake Recipe

Sis. Bassett--here it is! For those of you who may not have caught this story, see the post: Best Carrot Cake Ever!! Brenda wanted me to let you know that the recipe comes from a women you would know but I cannot remember her name and the Websters are in Yosemite...I'll have to get back to you on that part. But enjoy the recipe for now!!

4 Eggs, well beaten
1 C packed brown sugar
1 C white sugar
1 1/2 C vegetable oil
2 C unbleached flour
2 tsp baking soda
2 tsp baking powder
2 tsp cinnamon
1 1/2 tsp nutmeg
3 C finely grated carrots
1 C coconut
1 8oz can crushed pineapple
1 C golden raisins
1 C walnuts or pecans

Preheat oven to 325. Oil 3 8" cake pans Set out 1/2 C butter & 8 oz pkg cream cheese to soften (for frosting). Put pineapple in sieve to drain. Beat eggs in large bowl. Add sugars and beat until light and fluffy. Add oil and mix well with whisk. Put in the dry ingredients and beat until smooth. Stir in remaining ingredients and pour batter into oiled layer pans. Bake for 40 min or until knife comes out clean when inserted in center of cake. Cool slightly and frost.

Frosting
1/2 C butter
8 oz cream cheese
1 1lb box powdered sugar
3 tsp vanilla

(Wendy note: I would do ALL cream cheese)

Mix together till smooth. Frost between layers and on top. Try toasted coconut for decoration.

Raspberry Lemon Pudding Cakes

Sorry for the lack of blogging--I'll do a big blog day soon but for now here's a tidbit of fun:

I'm in love with Oregon! I love all the Farmer's Markets and fresh produce I can find here. I seriously have eaten the best raspberries, peaches and nectarines here that I can ever remember! I feel truly inspired to cook yummy food when I'm around all this stuff! When I got my new Sunset magazine (possibly my all-time favorite magazine) I even decided to try a dessert recipe in it! They were absolutely delicious! Light, fluffy and so tasty. They were suppose to be small portions but, well, I couldn't hold myself back. My one recommendation if you attempt them: it says that you can make the batter the day before--if you want it to be really lemon-y, I highly recommend it. I made it right before we were going to eat them and they had a lemon flavor but I wouldn't have minded a little bit stronger lemon flavor. Also, make sure and let them completely cool. Going Private

Yes my friends, I swore I would never do it. But I must. Ben and I have discussed it at length and we've made the decision to go private. However! Do not be dismayed! One of my biggest complainants about private blogs is that I forget to check them because they don't appear in my Google Reader! A couple months ago though, Ben suggested this to a friend and one of my other friends is doing it--so I'm going to switch to this method as well. Here is how it will work:

2. When I post a new post on our original blog, I will then announce it on the new blog so that Google Reader will pick it up.

Girls Camp 2009


One of my favorite parts of summer (when I was a teenager) was Girls Camp--a camp run by the LDS Church for girls ages 12-18. Ben's mom and sister were also huge fans of such activities. In fact, Ben's mom still goes as a leader to this day. Unfortunately, she was diagnosed in May with ovarian cancer and, although she wanted to be there and planned things for the camp up until the camp began, she was not going to be able to attend. Knowing that this was going to be very difficult for her my sister-in-law, Laura, thought it would be fun to surprise her by bringing camp to her! So we set out to surprise her by bringing camp home! Laura invited a couple of her good friends, Leah & Sara, to attend since they had been to camp with Brenda before and we also had our sister-in-law, Serena, come. We also brought all our daughters (the sons only stuck around for s'mores) and our nieces (their mom was at camp!). The night started with us putting on our camp shirts--courtesy of the Antelope North Stake (the camp Brenda was suppose to attend). Then we made foil wrap dinners, watched an old camp film and then got ready for campfire. Campfire consisted of singing all the oldies: Sippin' Cider, The Lord Said to Noah, The Donut Song...and so many more. We had a blast teaching the girls the songs and roasting marshmallows around the campfire. OH! And I cannot forget that we made (or attempted, I should say) to make Eclairs on a stick. They were sooooo good! And we had so much fun!

It was such a simple thing but it was a great way to honor such an amazing woman. My mother-in-law is seriously one of the most kind and gracious women I have ever met. She is constantly serving and loving those around her. I am so lucky to have not only have the most amazing husband (and Webster male) but I got another fantastic mom as well!
